Dhondt-Grellet
Located in Flavigny, the neighboring village of Avize, the 6-hectare estate has vineyards in the Premier and Grand Crus for Chardonnay and in the Marne Valley for Pinot Noir, with a few parcels of Chardonnay in the Sézannais (2 hectares). The range offered focuses on finesse and tension, with Burgundian-style ageing, rather than on structure.

Born of the 2012 vintage, this parcellaire des Nogers is one of the wonders of Adrien Dhondt-Grellet's range, a marvel that sets the tone from the very first turn of the glass. We enter the vinous register of great whites that have been left to age for a while (5 years here), with fabulous richness of taste and texture. After notes of candied citrus fruit, we move on to oil and quince. The bubbles, a little capricious on opening, just need to open up in a tall glass to release the cuvée's superb base wine. A real favorite!
