Born into a line of winegrowers dating back to the 18th century, David Coutelas, who made his first wine in 1995, produces 30,000 bottles on his 7-hectare estate in Villers-sous-Châtillon. He ages his wines in oak barrels, respecting a family tradition handed down from father to son. In winter, when the evenings are coldest, David opens the doors of his cellar to let in the cold and stabilize his wines. This ancestral vinification method avoids the need for mechanical filtration.
