Made from the three main Champagne grape varieties, this cuvée was vinified in oak barrels, without malolactic fermentation or filtration, and underwent a natural chilling process. The Chardonnay expresses itself clearly on the nose, with lovely vegetal (sorrel) and creamy notes. The palate is harmonious and balanced, with a long, saline finish. Try with goat's cheese and onion confit.

Born into a line of winegrowers dating back to the 18th century, David Coutelas, who made his first wine in 1995, produces 30,000 bottles on his 7-hectare estate in Villers-sous-Châtillon. He ages his wines in oak barrels, respecting a family tradition handed down from father to son. In winter, when the evenings are coldest, David opens the doors of his cellar to let in the cold and stabilize his wines. This ancestral vinification method avoids the need for mechanical filtration.
