A blended rosé with a deep raspberry color, reminiscent of a rosé de saignée. A blend of Champagne's 3 main grape varieties, this champagne has a gourmet mouthfeel, characterized by a sustained dosage tempered by bitters and the chalky texture perceived at the end of tasting. A pairing with a fine tart with tomato confit would be conceivable.

Gabriel-Pagin Fils

Maison Gabriel-Pagin, run by father-and-son winemaker-manipulants since 1946, covers 9.50 ha on the Grand Cru and Premier Cru terroirs of Avenay-Val-d'Or, Mutigny, Avize and Cramant. All the region's main grape varieties are grown here, with pinot noir predominating (80%). Here, integrated viticulture raisonnée is based on certain principles: ploughed vines, no chemical weeding, minimal must treatment, no yeasting, spontaneous alcoholic and malolactic fermentation, vinification in wood and long ageing in the cellar. The range is relatively narrow, but well thought-out and homogeneous.
