Almost 12 years of cellar ageing for this cuvée, with a well-developed nose of undergrowth and spices (sweet pepper, nutmeg). The palate is creamy, chalky and rich, with volume and freshness. A very fine Champagne to try with an aged Comté or a mature Dutch cheese.

Gabriel-Pagin Fils

Maison Gabriel-Pagin, run by father-and-son winemaker-manipulants since 1946, covers 9.50 ha on the Grand Cru and Premier Cru terroirs of Avenay-Val-d'Or, Mutigny, Avize and Cramant. All the region's main grape varieties are grown here, with pinot noir predominating (80%). Here, integrated viticulture raisonnée is based on certain principles: ploughed vines, no chemical weeding, minimal must treatment, no yeasting, spontaneous alcoholic and malolactic fermentation, vinification in wood and long ageing in the cellar. The range is relatively narrow, but well thought-out and homogeneous.
