Dauby Mère & Fille
Harvesting and handling in Aÿ, the company has been operating 8 hectares of vines for several generations, planted mainly with Pinot Noir (60%) and Chardonnay. This vineyard extends over five crus - including one grand cru and three premiers crus - and Barbonne-Fayel, where the plots are in conversion to organic farming. As creators of their own cuvées, Teddy and Francine Dauby control every stage in the winemaking process, guaranteeing the origin and quality of their production. Reserve wines are kept in tuns and oak barrels to ensure fine micro-oxygenation and bring out their aromatic complexity. In keeping with this approach, some of the cuvées are bottled on cork. The Daubys' aim is to preserve vines, soils and biodiversity by minimizing environmental impact and conveying the personality of terroirs in authentic, unique champagnes.
