From the very first aromas, a delicate evolution reveals aromas of walnut, toast, stewed apple and fresh mushroom. The palate is refreshing, with notes of fresh apple and vanilla, roasted pineapple and cinnamon. The balance is there, between lovely texture, fine, playful bubbles and a very pleasant wineiness. The finish is persistent, with notes of fresh walnut. A champagne to accompany poularde au vin jaune, for example.

Charles Clément

This is the generic name of the champagnes sold by the cooperative winery created in 1956 by 22 members in Colombé-le-Sec. However, Charles Clément was the name of the founding member. Nowadays, it is composed of 59 winemakers harvesting 110 hectares spread on the slopes around Bar-sur-Aube.
