This 100% meunier parcel cuvée, with zero dosage and no added sulfur, delivers intense peacock-tail aromas of baked apple, pastry, crème fraîche, mushrooms, humus and orange blossom. The palate is straighter, well channeled, marked by fruit (mirabelle plum and apple), with extreme finesse in a finish of humus and fine bitters. Try with smoked Banka trout, cassolette of mousserons with bits of candied quince.

Bruno Michel created this 12 hectare estate in 1985 in Pierry, a town 2 km south of Epernay, together with his wife Catherine. Since Bruno's untimely passing two years ago, the domain is now run by his daughter Pauline and her husband Guillaume Orban the Chef de Caves. Half is planted half with Chardonnay (including a parcel classified as premier cru), 40% Meunier, and the rest Pinot Noir. The couple's desire to respect the environment resulted in organic certification in 2004, using cover crops, green harvesting, composts, and herbal teas and plant concoctions to treat vine diseases. All of their champagnes are aged in tanks.
