While many restaurants in Saint-Étienne have closed their doors in recent years, Madame, run by Marie-Ange Martinez, continues to welcome a loyal clientele to its charmingly decorated space, reminiscent of a modernized Victorian reading room. The chef presents signature dishes that evolve with the seasons and showcase her distinctive style. The €43 set menu is well-balanced, featuring a starter of pollock with green apple and white balsamic vinegar, skin-on sturgeon fillet, yuzu beurre blanc, and basil pesto; a pork tenderloin with a coffee-reduced sauce and a mustard-walnut condiment; and a dessert of fresh figs, bourbon vanilla mascarpone, and hazelnut praline ice cream.
