Chef's Restaurant Talent waits for no age: at just 23 years of age, Caroline Vallance and Benjamin Faure, the only couple at the helm of Le Sonney, offer a unique, perfectly orchestrated 14-course gastronomic menu in the evening, a nod to the fourteen verses of poetry sonnets. This might put off the smaller eater, but the quantities are well managed. After the many Auvergne-accented appetizers, that evening we came across an exceptional apple with saffron foie gras, a true signature dish that impressed us, a deceptively simple tomato salad and a completely unstructured trout maki. Tender Allier lamb with gourmet spices accompanied by pea gnocchi and an amethyst tuile of red cabbage rounded off this high-flying savory score. For dessert, apricot is combined with olive oil macerate and thyme, then chocolate is topped with a silky cherry emulsion. To end this menu imbued with memories and emotions, the bricelet, a fine, crisp Swiss waffle, is a tribute to the chef's great-grandmother. A small, well-constructed wine list with local accents.
