Tucked away in a cave-like tunnel, this spot is as unique as they come, but it does more than just impress with its setting—it offers a sincere commitment to authentic market-fresh cuisine. Sébastien Gilbert ensures a complete dining experience, showcasing successful flavor pairings: a tartare of lightly seared shrimp, a crisp salad with citrus and cilantro, an orange and cognac bisque, a sea bream fillet seasoned with seaweed salt, creamy potato with carrot, orange, and cilantro, a mild chorizo cream, a beef tenderloin with fleur de sel and Sichuan pepper, a potato gratin with sun-dried tomatoes, a wine sauce, and prunes marinated in Armagnac.
