Just a few minutes from Longwy, Patrice Vilaine’s restaurant is a sure bet—a charming ochre-brick building where the chef serves dishes that are as pleasing in substance as they are in presentation. The chef showcases the seasons beautifully, much like a perfectly cooked egg: cancoillotte, spinach, and chanterelles; potato and saffron mousse; confit cod with mussels, carrots, Thai curry sauce with coconut milk, Sardinian fregola, and shiso emulsion; pork pluma with a sauce vierge made with porcini mushrooms, pak choi, black garlic jus, eggplant condiment and sesame oil, flambéed salsify, a warm praline chocolate mousse, peanut ice cream, caramel, and Piedmont hazelnuts.
