Chef's Restaurant
Though still unknown to the general public, Alexandre Chambat—who boasts a very solid background (he trained under Pascal Barbot during his time on Rue Beethoven, Guy Savoy at the Monnaie de Paris, and Yannick Alléno at Ledoyen)—and his restaurant Eskal are sure to make a name for themselves soon. At the helm of a team just as young as he is—and among whom we recognized a few former colleagues from Arthur Dubois—this young chef from Annecy offers a cuisine centered on the ingredients, clean, and already brimming with personality. His dish of artichokes, mushroom cream, artichoke-stuffed brioche, and blackcurrant condiment is a paragon of indulgence; his fricassee of (French) porcini mushrooms and Pedro Ximenez balsamic vinegar pays a heartfelt tribute to home-style cooking, followed by a dish of bonito and Paimpol coconut beans with more contemporary touches. The mallard duck, pointed cabbage, house-made green curry, duck jus, and lamb’s quarters take us back to that modernized tradition we love so much (magnificent jus, meat cooked to perfection). Desserts follow the same spirit, blending classic and modern styles, though the wine cellar is still under construction. Don’t hesitate to reserve a spot at the counter, where—for once—you’ll be truly comfortable.
