Gourmet Restaurant Right next door to the 4* Château de Saulon, the bistronomic restaurant is a good extension of the hotel, with its refined setting, both historic and contemporary. The place aspires to a form of rustic chic, with an elegant emphasis on natural materials and a revisited traditional cuisine with a meticulous aesthetic. The perfect egg is served in a Crémant de Bourgogne sauce, crisped with bread; turbot fillet is accompanied by a shellfish marinière and parsnip purée; beef cheek is braised in pinot noir, with mashed potatoes and pickled onions; pavlova is with blackcurrant mousse, blackcurrant coulis and red fruit. Formulas at €49 and €65.
