The chef creates sophisticated bistronomy, making full use of premium ingredients. You can enjoy scrambled eggs with truffle cream, crispy veal sweetbreads, reduced veal jus, and pappardelle; a mushroom risotto; truffle-infused Parmesan cream with mushrooms; and, finally, a Calvados-flambéed apple served with a speculoos crumble and Chiboust cream.
