Etchebest's ephemeral menu
True to his philosophy of simple, generous and accessible cuisine, the chef is offering a selection of original recipes based around raviole, in both savory and sweet versions. Among the creations to discover duck confit raviole topped with jus réduit, a vegetarian variant with fresh herbs and goat's cheese, and a sweet version with caramelized apples and salted butter caramel. Each plate is priced from 5 to 10 euros - slightly less than the raviole at Signature.
