"We met them at the Laguiole market. Two young people who aren't originally from the region, but who chose to take up the challenge of market gardening on the Aubrac plateau", explains Sébastien Bras. Extreme weather conditions, harsh altitudes: everything grows slowly, but with an exceptional concentration of flavors. "I immediately liked their approach. They ask us what we want for the following year, and they adapt." Today, their production complements the vegetable garden of Maison Bras and other local producers. A story of trust and passion.

Jeune Montagne Cooperative, Laguiole
It's impossible to talk about Laguiole without mentioning its cheese. And behind its preservation: André Valadier. "Each buron used to have its own cheese, with its own herds and therefore its own personality. When the burons began to disappear, he did everything to save this heritage." Even today, Sébastien works regularly with the cooperative. Cheese is present on the cheese platter, but also integrated into his dishes. "It's a product that marked my childhood. It's an integral part of our culinary identity."
