January 17 is Italian Cuisine Day. To mark the occasion, Gault&Millau has compiled a list of the 10 best addresses in the Yellow Guide.

Often reduced to pasta, pizza, risotto and tiramisus, Italian cuisine is much richer than it seems. Like France, each region has its own traditions and tasty specialties. At a press conference on March 23, 2023, Francesco Lollobrigida, Italy's Minister of Agriculture and Food Sovereignty, announced that Italian cuisine would be included in UNESCO's list of intangible cultural heritage.

Every year, Italian cuisine is celebrated on January 17. Why this date? It's the Catholic feast day of Sant'Antonio Abate, the patron saint of animals, but also of butchers and salami. It's also the first day of Carnival, when traditional dishes are often prepared for the occasion.
