With the death of Pierre Cheval, a major contributor to the Unesco classification of Champagne's landscapes, Louis Cheval, representing the twelfth generation, took over the 7.50 ha of 27 parcels of vines in Aÿ in 2016. He had already been running the estate on a day-to-day basis since 2010. Here, Pinot Noir is the star of the show, giving the champagnes a structure all their own, generally offering a relatively vinous, full-bodied style with ripe, clean fruitiness, perfectly enhanced by the choice of light dosages.
