A great vintage, then, as Dom Pérignon only vintages great years, with a selection of the best grapes, the best plots, the best villages, nothing less. The crème de la crème with a perfectly balanced 2012, a blend of 49% Chardonnay and 51% Pinot Noir. Creamy bubbles on a golden base with silver highlights. Lively and impetuous, the bubbles take us to a subtle, expressive nose with aromas of dried fruit, fresh butter, white flowers, peaches, apricots, with a hint of menthol and vanilla. On the palate, the attack is smooth, almost honeyed. Then, aided by creamy effervescence, the wine becomes lively and invigorating, with citrus and rhubarb flavors. The length is impressive and thirst-quenching, with a hint of zest. Definitely Dom Pérignon. Food pairing: creamy vegetable risotto with a touch of Alba white truffle.

Dom Pérignon, arguably the most popular prestige cuvée with the general public, appreciated for its opulent, brioche-like style, has always held a special place at Moët & Chandon. Each cuvée is vintaged, in the search for a constantly renewed balance between chardonnay and pinot noir, in the context of the year, while aiming to create a perennial character. The exact production figure is a state secret, but it is undoubtedly surprisingly high for such a level of quality. Vincent Chaperon took over from the house's historic cellar master, Richard Geoffroy, in 2019, having spent almost fifteen years at his side. He now perpetuates the excellence of Dom Pérignon wines and keeps the house's creative heritage alive.
