What an intense color, somewhere between grenadine and clairet! Then we discover a world of stewed red berries, seasoned with a hint of smoky white pepper for tonicity. Rounder, pastry-like aromas appear with aeration (sourdough, warm bread), adding an extra dimension. In the mouth, the Pinot Noir grape variety (the majority in this rosé de saignée) contributes its fruity, spicy structure. Small, velvety tannins give structure to the matter, leading this champagne into the world of gastronomy.

Collard-Picard

Descended from two Champagne winegrowing families, Olivier Collard and Caroline Picard have been cultivating 16 hectares of vines since 1996, on terroirs suited to their needs: pinot meunier on the right bank of the Marne valley (Villers-sous-Châtillon, Reuil...), grand cru chardonnay at Mesnil-sur-Oger and Oger, and premier cru pinot noir at Vertus. Convinced of the benefits of wine tourism, the family owns a wine cellar on the Avenue de Champagne, and offers limousine tours and helicopter flights upon reservation.
