Chef's Restaurant The address is discreet, yet it's one of the most exciting tables on the plateau. Fabrice Roche runs his restaurant with his wife Carine (both of whom have worked for Orsi and Henriroux) in an almost family atmosphere, a human bond established with a great deal of naturalness, and high-level dishes that leave no one indifferent and explain the loyalty of insiders. We'll be back for this fine value-for-money €43 menu, featuring salmon crudo, mango/passion, celery and mustard seed pickles, coriander sorbet, low-temperature fish, braised pork, lemon, parsley, quince condiment and bone juice with balsamic juice, a two-cooked duck, braised leg and roasted breast, parsnip, black garlic and aromatic cooking juice, a dessert of pear, chestnuts, mulled wine and mandarin cardamom sorbet. Well-informed cellar.
