Chef's Restaurant As with Mozart's Papageno, there's enchantment to be found at Papagallo: the secret pizza imported from Sicily sixty years ago by Roland and Daniel Gallo's father still has the same magic, and although we're no longer in the hills of the Maures, where the family home once stood, the recipe for the Sicilienne, tomato, anchovy and basta, has not changed, to the undiminished delight of those who have tasted it for so many years. Of course, you can also come for the loup en croûte de sel and the pâtes flambées dans la roue de parmesan, two of the great successes of this stall with its vast terrace on the port of Bormes, run by the two brothers who have always held the torch. Under the impetus of Roland, who oversees everything, the menu expands every season, including the cellar, and of course, for purists, the pizza and the two tarts, lemon and apple.
