Gourmet Restaurant L'Imparfait offers seasonal Périgord cuisine in a stone setting with a semi-open kitchen. The old-fashioned tomato mosaic combines white squid and Black Tiger prawns on a bed of young shoots, with roasted rapeseed oil as a liaison. A generous composition with well-expressed land-sea contrasts and a seductive color palette. La marmite du pêcheur brings together fish, shellfish and scallops in a langoustine head jus, finished with basil oil. Classic execution, noble products correctly treated, a traditional association that works. The red fruit vacherin is well composed, with French meringue, matcha tea chantilly and raspberry ice cream. The plate reveals a fine visual balance, with harmonious contrasts of color and texture. The matcha touch adds a welcome creative touch. The wine list offers a coherent selection of well-recognized appellations with good regional roots. A thoughtful and reassuring choice for customers, with attentive professional service.
