Chef's Restaurant Since its opening in 2021, we've known Alban Chartron, Hideki Nakamura, and until recently Sheila Guidotti. Two months ago, Brazilian chef Carlos Manuel, formerly of Oka, took over the kitchen. With a new formula and no menus, just a short menu: beet salad, peaches, pesto, ricotta or, more gourmet, chanterelles and sweetbreads sautéed in garlic. We then tried the veal chop Milanese style, with carrot tops and a rather powerful, full-bodied jus, and a fruity dessert of apricots, cherries, fennel and hazelnut cookie, quite simple in concept. Well-stocked wine list, from all regions plus a few Italian wines to suit all budgets. Friendly, unpretentious service.
