Remarkable Restaurant Completely refurbished to house chef Philippe Mille's world, this late 19th-century pavilion has taken on a whole new dimension, with its ultra-modern, uncluttered interiors focusing all attention on the plates. The MOF chef, who has worked with Anton and Alléno, has taken with him his fifteen years of experience at Les Crayères, giving Reims one of its finest tables in the city center. The address has quickly established itself as the city's leading meeting place, where the chef's inventions and noble products are celebrated in equal measure. Of course, there's the "arbanothèque", based on Champagne grape varieties, followed by tomato and Reims vinegar, a bluffing exercise based on cod and powdered ceps, before discovering the work on suckling pig, then the dessert based on hazelnut and lemon. A remarkable cellar, naturally oriented towards Champagne and Burgundy.
