Snacked langoustine opens the tasting session: precise cooking, creamy pea-sauce creaminess, claw juice that spices things up just right. The veal sweetbread confirms our technical mastery: perfectly cooked, teriyaki caramel adds a measured sweetness, artichoke tomatoes and parmesan harmoniously combine.
