Chef's Restaurant Andres Reyes Solis remains on the right track, developing a cuisine that respects the principles of proximity and care for origins. Plates here are dressed with a contemporary Latin touch, combining terroirs and cultures: pata negra sausage, barbecued guinea fowl leg and salsa guindillas, cod, pickled carrots and beurre blanc with chile morita, Charolais beef rib matured for sixty days on the barbecue and salsa verde, a laurel cake with arbequina olive oil ice cream. Vegetarian dishes are available daily. Good cellar with over five hundred references.
