Remarkable Restaurant Tsuyoshi Arai's cuisine continues to exude finesse and elegance, bringing his exacting standards and precision from Japan to meticulously selected products. It's French cuisine that's rediscovering its terroir, with noble products and exemplary cooking: caviar, pommes dauphine and nutmeg, lemon caviar, foie gras monaka, eggplant, fig and pine nuts, a pot-au-feu with vegetables from the Lyon region, a stuffed Bresse chicken wing, gambas and XO sauce, a wood-fired saint-pierre, bouchot mussels, celery and Buddha's hand, a crusted doe, red miso, cabbage and buckwheat. Excellent food and wine pairings.
