Remarkable Restaurant From the salons of the Tour d'Argent, you can admire Notre-Dame, and from the salons of the 1741, the Palais Rohan. Here, you'll find the same hushed, secluded atmosphere, where you can take in the sights for the duration of a dinner. It's an exemplary gastronomic restaurant, with palatial service and the rigor of chef Jérémy Page, who trained with Joël Robuchon. Seasonal dishes that indiscriminately bring together noble and local produce, such as Greek cauliflower salad, lentils, tomato, herbs and basil, sherry vinegar, mackerel and kohlrabi, horseradish, fennel shoots and carrots, in an almost Japanese style, a luxurious interlude of creamy potatoes, smoked eel and caviar, a good red mullet à la flamme, nasturtium flower, bomba rice and rock fish soup reduction. There's also stuffed zucchini flowers, taggiasche olive and cherry tomato juice as a warm vinaigrette, Bigorre black pig loin and fennel, and finally an Isigny cream and dried fruit, well seasoned with honey. An excellent wine list and expert advice, offering both great wines and more confidential references (Otter, Fumey-Chatelain, domaine Baussanne...).
