Chef Marc Haeberlin has just inaugurated a new address in Paris: a delicatessen, accessible to all, attached to the Auberge de l'III, combining Alsatian products, chocolate and the art of living.

in the Haut-Rhin village of Illhaeusern, where theAuberge de l'III (5 toques d'or) has carried on the family tradition for several generations, Marc Haeberlin has just opened a new address: Atelier Haeberlin. Inaugurated on April 3, 2025, in the former presbytery, this hybrid space serves as both delicatessen and chocolate workshop. The aim is to remain accessible to all, whether customers of the restaurant, theHôtel des Berges - also run by the family -, local residents or visitors passing through.

An exclusive gourmet offer

The boutique features a selection of quality products: breads, pastries, chocolates, wines and delicatessen products. The bread is supplied by Hirose, a well-known Alsatian firm and served at the Auberge table. Three creations, devised in collaboration with Marc Haeberlin, are offered exclusively at the Atelier: the restaurant's signature Yin Yang loaf, made with carefully selected flours, a seasonal mini Kougelhopf flavored with wild garlic, and a black olive and rosemary focaccia.

upstairs, a chocolate-making workshop produces in-house creations, such as the Easter bunnies created for the occasion. The premises also house rooms for the restaurant's apprentices.

More than just a grocery store

L'Atelier Haeberlin is also a place of memory and sharing. A bookshop features works by chefs selected by Marc Haeberlin. A number of items emblematic of the Auberge l'III are also on sale: bread baskets and wine carafes, tableware... A way of taking away a little of the spirit of the place, in a more relaxed setting, but still just as well cared for.
