Laëtitia Visse, chef at La Femme du Boucher restaurant in Marseille's 6th arrondissement, reveals the names of five producers and artisans where you can find meat, vegetables and cheese.

In Marseille's vibrant culinary scene, Laëtitia Visse, talented chef at La Femme du Boucher (2 toques), has quickly established herself as a key figure. Passionate about quality products and respectful of tradition, she maintains a privileged relationship with local producers and artisans, the true guarantors of taste and savoir-faire. Today, Laëtitia Visse opens up her address book and shares five favorite places where she sources the treasures that enhance her cuisine. From pig breeders to bush producers to an exceptional cutler, she invites us to discover these artisans who, like her, have made excellence their trademark.

François Borel's La Brousse du Rove, in La Roque-d'Anthéron

"The first name that comes to mind is François Borel, who breeds goats and makes Brousse du Rove, as well as drier cheeses. The animals are fed with what they find on the hillside, which gives a very fragrant taste to the fresh cheese. In July, he also sells goat kids, which I cook in the restaurant. It's a little-exploited meat, but one that would really benefit from being better known", says the chef of Marseille's La Femme du Boucher restaurant. "He also produces olive oil and has a few guest rooms on his estate, called La Jacourelle. It's a very bucolic place, a real favorite!"

Pigs and lambs from Ferme de Mayrinhac, Rodelle

The third address mentioned by the young chef is in Rodelle, Aveyron. "It's La Ferme de Mayrinhac. It's my pig and lamb supplier. Their pigs are of exceptional quality! I use them to make all my charcuterie. I find their fat-to-lean ratio very interesting. It's a very tender, marbled meat, with a lot of flavor. I've been working with them for many years and I've never been disappointed," assures Laëtitia Visse.

La Coutellerie Dravet, Marseille

Would you like to give yourself a nice present soon? Why not a beautiful knife from the Dravet company, in Marseille! "They make table knives and kitchen knives, and what I think is great is that you can ask them for custom-made knives. Recently, for example, I ordered a knife for my partner, made from marrow bones I'd collected at the restaurant. They warned me it was going to be complicated, but the result is great."

Terre de Mars urban farm, Marseille

Terre de Mars is an urban farm created in 2015 in Marseille's 14th arrondissement. "They've developed a totally fallow space with lots of diversity, and the quality of their produce is mind-blowing. They sell at markets, but also at Brasserie Zoumaï on Thursday afternoons. For restaurateurs, they deliver by bike", explains the chef.

Jamal Benhida's vegetables, Saint-Rémy-de-Provence

"Jamal is a well-known fruit and vegetable producer in Saint-Rémy-de-Provence. A lot of us restaurateurs go to see him on Wednesday mornings at the Cours Julien market in Marseille... But you have to be quite early, because he's quickly snapped up! His products are really great. "
