Antoine Gras, chef at La Table de l'Ours restaurant in Val d'Isère, reveals five places to buy good meat, cheese and even wine!

Antoine Gras, chef at La Table de l'Ours (3 toques), nestled in the heart of the Les Barmes de l'Ours hotel in Val d'Isère, is establishing himself as one of the emerging talents on the Alpine gastronomic scene. Named Grand de Demain by Gault&Millau 2024, he is strongly attached to the authenticity and richness of local produce, and fashions a refined cuisine inspired by the mountains and their treasures. In a spirit of sharing, he now reveals the names of his favorite producers and artisans, from farmers to butchers to winemakers, who imbue his creations with a unique identity and an incomparable taste of the Savoyard terroir.

Products from La Ferme de l'Adroit, Val d'Isère

La Ferme de l'Adroit, located at an altitude of over 1,800 metres in the heart of the village of Val d'Isère, is a place thatAntoine Gras is particularly fond of. "It's a farm like we used to find in the old days. They produce raclette, which we offer at the hotel, but they also have pigs, cows and chickens. In fact, I get my eggs there. It's also a great place for families to discover, as the farm is open to children who would like to see the animals", explains the chef.

Paola Pittau's tableware, Bourg-Saint-Maurice

Paola Pittau is a ceramist with whom Antoine Gras has worked since the beginning. "I'd say 80% of the tableware at La Table de l'Ours comes from her," he says. "Her creations are original and she really adapts to each request, in terms of color and shape," adds the chef. "She has her store in Bourg-Saint-Maurice's main street, in association with a bookseller, a woodcarver, a honey producer... It's really focused on local craftsmanship."

La Boucherie des Arcades, in Séez

For quality meat, Antoine Gras likes to go to La Boucherie des Arcades, in Séez. "The owner, Fred, is also a farmer. He raises lamb and pigs, and makes his own charcuterie. His diot sausage is absolutely delicious and well worth the detour! You can also find lamb and other cured meats here," he says.

The wines of Anne-Sophie and Jean-François Quénard, in Chignin

For part of his wine selection, the chef at La Table de l'Ours relies on Anne-Sophie and Jean-François Quénard, whose estate has been established in Chignin since 1644. " Their cuvées are atypical, both in white and red", assures Antoine Gras. The estate, run by father and daughter, covers 16 hectares of vines and focuses on indigenous Savoy grape varieties such as Mondeuse and Roussette.

Kids from La Ferme du Planay, Villaroger

"This farm is located about 15 km from the restaurant. Eddy raises goats and I take his fromage blanc and yoghurts for the hotel breakfast, as well as his goat cheese for the restaurant platter. I also love to cook goat meat, which is a very rare type of meat. I come from a farming family and we used to cook two a year, so it really reminds me of my childhood," recalls Antoine Gras.
