The Madame Rêve hotel has just confirmed the opening of Kitchen, a new restaurant with a menu designed by chef Stéphanie Le Quellec. Here's what you can expect.

It's the surprise opening of the fall season. Until now, the Madame Rêve hotel in Paris has been focusing on Asian-influenced cuisine with its Plume restaurant and Roof bar.has just announced the inauguration of a third showcase with the help of Stéphanie Le Quellec.

A menu as healthy as it is comforting

This new offering, christened Kitchen, is housed in a XIXᵉ-inspired room under 8-meter-high ceilings, reminiscent of the great Parisian cafés of the Belle Epoque. Of course, there's no question of Stéphanie Le Quellec abandoning her restaurant La Scène, located in the capital's 8th arrondissement. At Madame Rêve, the chef simply signs the menu with the firm intention of satisfying as many people as possible.

You can choose a dish according to your mood of the day: "Healthy trendy", with, for example, avocado cocktail with pink shrimp or steamed cod and spinach shoots, or "I'm doing me wrong!"with more comforting recipes such as pâté-croûte with foie gras, bone marrow or pork loin with buttery purée. The "Not so Frenchy" selection suggests lamb shoulder confit rubbed with zaatar and legumes tajines or a red shrimp curry with coconut rice and lime, while the "Flashback" selection takes us back to childhood, with pasta with buttered ham and Comté cheese, or a croque-madame with Beaufort cheese. The list goes on and on, catering for all tastes, even vegetarian and gluten-free. The chef has come up with simple recipes with that "little extra touch" that only she knows. "There won't be a sophisticated menu, just what I know how to do and love, the classic dishes of French cuisine", explains Stéphanie Le Quellec.

Kitchen, located on the first floor of the hotel, has a terrace and is open daily for lunch and dinner, with or without reservation. Breakfast is also available from 8:30 to 10:30 a.m. Monday to Friday, and until 11 a.m. on Saturday and Sunday.
