Young Japanese chef Shun Narise will take charge of Fulgurances from September 18, 2023. Here's his background and what he plans to offer during his residency.

For nearly ten years, Fulgurances has been a scout for culinary talent. The restaurant, located in the 11ᵉ arrondissement of Paris, is an incubator enabling young chefs to test their cooking with a real clientele, but also to deepen their management of a brigade and hone their identity, before taking the plunge and opening their own address.

With this in mind once again, the Fulgurances team, comprising Sophie Cornibert, Rebecca Asthalter and Hugo Hivernat, announces the arrival of a new resident chef from September 18, 2023. His name? Shun Narise, a young Japanese chef trained both in his home country and in France, and already boasting a wealth of experience.

Who is Shun Narise?

The chef was chef de partie at the French restaurant Côte d'or in Tokyo before arriving in Paris four years ago. In recent years, he has worked at Chez Les Anges and then at l'Arcane, in the capital's 18ᵉ arrondissement. These experiences have enabled him to "tame the French terroir, its agriculture, the variety of fish and meats, theecosystem in general", assures the press release sent out on the occasion of his arrival at Fulgurances. More recently, Shun Narise became a home chef before taking an internship at Kadeau in Copenhagen. At Fulgurances, Shun Narise aims to cook "warm, Japanese-influenced dishes using local French produce, as well as broths and sauces, which he is particularly fond of."

Over the years, Fulgurances has seen the emergence of many culinary talents, who today have made a name for themselves in the world of gastronomy. The restaurant has given Alice Arnoux, Céline Pham, Bruno Laporte and Chloé Charles a chance. Now it's Shun Narise's turn to take up the challenge!
