Chef Camille Delcroix of the Bacôve restaurant in Saint-Omer was named Grand de Demain at the Gault&Millau Tour Hauts-de-France.

"It's a nice salute from Gault&Millau!" Camille Delcroix, chef restaurant Bacôve (2 toques), was named Grand de Demain 2024, during the Gault&Millau Tour Hauts-de-France. The event was held this Monday, October 14, 2024 at the Orangerie de la Baie, in Le Touquet-Paris-Plage.

The transition from chef to entrepreneur has been a real challenge for Camille Delcroix. "You need time to get your bearings and see who you're going to be working with. After three years, you start to really enjoy yourself, and I think you've got the right stuff." And success is on the cards!"What I'm most proud of today is that I have customers who come from far and wide, and they're coming back!"

Rewarding joint efforts

Camille Delcroix 's cuisine? "Above all, it's a cuisine that I want to make. I sincerely believe that you have to please yourself before you can please others", he explains.Today, I'm a chef, but above all I'm a business owner. I support 20 people. That's why the guide's review is so cool. It's gratifying for us as owners, but also for the team," says the chef, who enjoys reminding his staff that they still have to do better than tomorrow!

"Grand de Demain means everything! We still have time, and I don't want to go too fast!" The first year had been challenging for the chef, who sold out lunchtime and evening. Today, he and his teams have managed to get into a cruising rhythm, and it's paying off.
